Instructions

Cut the chicken breast into bite-sized pieces.

In a small bowl, toss the chicken pieces with chili powder, cumin, paprika, garlic powder, and salt to coat.

Slice the zucchini and bell pepper, and thinly slice the onion.

Heat oil in a large skillet over medium-high heat.

Add the seasoned chicken to the skillet and cook until browned on all sides, about 4-5 minutes.

Add the sliced onion, bell pepper, and zucchini to the skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
