Warm Chicken and Spinach Salad with Lemon-Olive Oil Dressing

Ingredients (Serves 1)

cooked chicken breast200 g
fresh spinach100 g
celery50 g
onion30 g
olive oil30 ml
lemon juice10 ml
salt1 g
black pepper1 g

Instructions

Dice or shred the cooked chicken breast.

Finely chop the celery and onion.

Heat 10 ml of olive oil in a pan over medium heat. Add the chopped onion and celery and sauté until softened, about 5-7 minutes.

Add the fresh spinach to the pan and cook until just wilted, about 1-2 minutes.

Add the cooked chicken breast to the pan and stir to warm through.

While the vegetables and chicken are warming, whisk together the remaining 20 ml of olive oil and the lemon juice in a small bowl. Season with salt and black pepper.

Remove the chicken and vegetable mixture from the heat and transfer to a bowl.

Pour the lemon-olive oil dressing over the warm chicken and vegetables and toss gently to combine.

Serve immediately.
