Warm Beef and Vegetable Pasta Salad

Ingredients (Serves 2)

Dry pasta (dairy-free)200 g
Lean ground beef (90%)250 g
Onion150 g
Bell pepper200 g
Garlic10 g
Spinach100 g
Olive oil30 ml
Dried herbs (oregano, basil)5 g
Salt2 g
Black pepper1 g

Instructions

Cook the dry pasta according to package instructions. Drain and set aside.

While the pasta is cooking, heat a large skillet over medium-high heat. Add the lean ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Add the chopped onion and bell pepper to the skillet with the beef. Cook for 5-7 minutes, or until softened.

Stir in the minced garlic and dried herbs (oregano and basil). Cook for another minute until fragrant.

Add the spinach to the skillet and cook until wilted.

In a large bowl, combine the cooked pasta, beef and vegetable mixture.

Drizzle with olive oil, season with salt and black pepper, and toss gently to combine.

Serve warm or let cool to room temperature.
