Vietnamese Lemongrass Beef Stir-fry with Jasmine Rice

Beef Sirloin130 g
Jasmine Rice50 g
Bell Pepper100 g
Onion50 g
Garlic5 g
Lemongrass Paste10 g
Fish Sauce15 ml
Soy Sauce10 ml
Sugar5 g
Cooking Oil15 ml
Water30 ml
Cilantro5 g

Instructions

Cook jasmine rice according to package directions and set aside.

Thinly slice beef sirloin against the grain. Slice bell pepper and onion into thin strips. Mince garlic.

In a small bowl, whisk together lemongrass paste, 10ml fish sauce, 5ml soy sauce, 3g sugar, and 30ml water to create the stir-fry sauce.

Heat cooking oil in a large pan or wok over high heat. Add beef and stir-fry for 2-3 minutes until browned. Remove beef from the pan and set aside.

Add bell pepper, onion, and minced garlic to the same pan. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

Return beef to the pan. Pour in the stir-fry sauce and toss everything together, cooking for another 1-2 minutes until heated through. Season with remaining fish sauce and soy sauce to taste.

Serve hot with jasmine rice, garnished with fresh cilantro.
