Bell Pepper0.5 unit
Zucchini0.5 unit
Red Onion0.3 unit
Cherry Tomatoes0.5 cup
Olive Oil1.5 tbsp
Lemon0.5 unit
Dried Oregano1 tsp
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Step 1: Dice the chicken breast into 1-inch cubes. Chop the bell pepper, zucchini, and red onion into similar-sized pieces.

Step 2: In a bowl, toss the chicken and chopped vegetables with 1 tbsp olive oil, dried oregano, salt, and black pepper. Thread them onto skewers, alternating chicken and vegetables.

Step 3: Cook the quinoa according to package directions (usually 1 part quinoa to 2 parts water, simmer for 15 minutes, then rest for 5 minutes).

Step 4: Heat the remaining 0.5 tbsp olive oil in a grill pan or large skillet over medium-high heat. Cook the skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp.

Step 5: Squeeze fresh lemon juice over the cooked skewers. Serve immediately with the cooked quinoa.
