Vietnamese Lean Pork & Potato Curry with Baguette

- Onion40 g

- Coconut Milk90 ml
- Lean Pork Loin180 g
- Potato100 g
- Vietnamese Yellow Curry Powder4 g
- Water100 ml
- Sugar3 g
- Baguette40 g
- Cilantro5 g
Instructions

Trim any excess fat from the lean pork loin and cut into 2 cm cubes. Peel and dice potato and carrot into 1.5 cm cubes. Mince onion and garlic.

In a medium saucepan, heat a small amount of cooking oil over medium-high heat. Add minced onion and garlic and sauté for 2 minutes until fragrant.

Add pork cubes to the pan and sear for 3-4 minutes until lightly browned on all sides.

Stir in Vietnamese yellow curry powder, diced potato, and carrot. Cook for 1 minute, stirring to coat the ingredients.
