Vietnamese Grilled Pork Chop with Broken Rice (Com Tam Suon)
A classic Vietnamese dish featuring a tender, marinated grilled pork chop served over broken rice, accompanied by a fried egg and fresh cucumber, tomato, and quick-pickled carrots.

- Broken Rice40 g
- Fish Sauce15 ml
- Garlic5 g
- Cucumber50 g
- Tomato50 g
- Carrot30 g
- Lemongrass Paste5 g
- Cooking Oil15 ml
- Vinegar10 ml
- Pork Chop160 g
- Egg1 large
- Soy Sauce10 ml
- Sugar5 g
- Water10 ml
Instructions

Cook broken rice according to package directions and set aside.

Thinly slice pork chop. In a shallow dish, combine 5ml fish sauce, 5ml soy sauce, 2g sugar, minced garlic, and lemongrass paste. Marinate pork for at least 5 minutes.

While pork marinates, thinly slice cucumber and tomato. For quick-pickled carrots, julienne carrot and mix with 5ml fish sauce, 10ml vinegar, 10ml water, and 3g sugar.

Heat 10ml cooking oil in a non-stick pan over medium-high heat. Pan-fry the marinated pork chop for 3-4 minutes per side until cooked through and nicely browned. Remove from pan.

In the same pan, add remaining 5ml cooking oil and fry the egg to your liking (sunny-side up or over easy).
