Vietnamese Grilled Pork Chop with Broken Rice (Com Tam Suon)

Pork Chop160 g
Broken Rice40 g
Egg1 large
Fish Sauce15 ml
Soy Sauce10 ml
Sugar5 g
Garlic5 g
Lemongrass Paste5 g
Cooking Oil15 ml
Cucumber50 g
Tomato50 g
Carrot30 g
Vinegar10 ml
Water10 ml

Instructions

Cook broken rice according to package directions and set aside.

Thinly slice pork chop. In a shallow dish, combine 5ml fish sauce, 5ml soy sauce, 2g sugar, minced garlic, and lemongrass paste. Marinate pork for at least 5 minutes.

While pork marinates, thinly slice cucumber and tomato. For quick-pickled carrots, julienne carrot and mix with 5ml fish sauce, 10ml vinegar, 10ml water, and 3g sugar.

Heat 10ml cooking oil in a non-stick pan over medium-high heat. Pan-fry the marinated pork chop for 3-4 minutes per side until cooked through and nicely browned. Remove from pan.

In the same pan, add remaining 5ml cooking oil and fry the egg to your liking (sunny-side up or over easy).

Assemble the plate: Place cooked broken rice, grilled pork chop, fried egg, sliced cucumber, tomato, and quick-pickled carrots. Serve with a small bowl of remaining fish sauce for dipping.
