Jasmine Rice120 g
Green Beans100 g
Coconut Milk50 ml
Light Coconut Milk50 ml
Red Curry Paste15 g
Fish Sauce15 ml
Garlic10 g
Shallot10 g
Basil5 g
Cooking Oil2 ml

Instructions

Cook jasmine rice according to package instructions. While rice cooks, prepare the curry.

Trim the ends of the green beans. Mince the garlic and shallot. Roughly chop the basil leaves.

Heat cooking oil in a pan or wok over medium heat. Add minced garlic and shallot, sauté for 1 minute until fragrant.

Add red curry paste and cook for 1-2 minutes, stirring constantly, until aromatic.

Add ground pork, breaking it up with a spoon, and cook until browned (about 3-4 minutes).

Stir in full-fat and light coconut milk, green beans, and fish sauce. Bring to a simmer, then reduce heat and cook for 3-5 minutes, allowing the sauce to thicken slightly and flavors to meld.

Stir in fresh basil just before serving. Serve the dry pork curry over the cooked jasmine rice.
