Ingredients (Serves 1)

Beef Sirloin200 g
Rice Noodles100 g
Bell Pepper80 g
Onion50 g
Garlic10 g
Ginger5 g
Curry Powder5 g
Light Coconut Milk50 ml
Fish Sauce15 ml
Soy Sauce10 ml
Cooking Oil5 ml
Cilantro5 g

Instructions

Slice beef sirloin into thin strips. Slice bell pepper and onion. Mince garlic and ginger. Chop cilantro.

Cook rice noodles according to package instructions until tender, then drain and set aside.

In a large pan or wok, heat cooking oil over medium-high heat. Add beef strips and stir-fry for 2-3 minutes until browned. Remove beef from the pan and set aside.

Add bell pepper, onion, minced garlic, and minced ginger to the same pan. Stir-fry for 3 minutes until vegetables are slightly tender-crisp.

Stir in curry powder, light coconut milk, fish sauce, and soy sauce. Bring to a gentle simmer.

Return the cooked beef to the pan. Add cooked rice noodles and toss everything together to coat evenly with the sauce. Cook for 1-2 minutes until heated through.
