Vietnamese Beef & Bell Pepper Stir-fry with Basil

Ingredients (Serves 1)

Lean Beef160 g
Jasmine Rice30 g
Bell Pepper80 g
Onion40 g
Garlic5 g
Fresh Basil10 g
Fish Sauce15 ml
Soy Sauce10 ml
Sugar5 g
Cooking Oil5 ml

Instructions

Cook jasmine rice according to package directions. Keep warm.

Thinly slice the lean beef against the grain. Slice the bell pepper and onion into strips. Mince the garlic. Roughly chop the fresh basil.

In a small bowl, whisk together fish sauce, soy sauce, and sugar to make the stir-fry sauce.

Heat cooking oil in a wok or large skillet over high heat. Add minced garlic and stir-fry for 15 seconds until fragrant.

Add sliced beef and stir-fry for 2-3 minutes until browned. Remove beef from the pan and set aside.

Add bell pepper and onion to the same pan. Stir-fry for 2-3 minutes until tender-crisp.

Return the beef to the pan. Pour in the stir-fry sauce and toss to coat. Stir in the fresh basil leaves until wilted.

Serve the beef and bell pepper stir-fry immediately with the cooked jasmine rice.
