Black Beans0.5 cup
Corn0.3 cup
Bell Pepper2 oz
Salsa1 tbsp
Avocado0.3 count
Olive Oil1 tsp
Lime0.5 count
Cilantro2 tbsp
Cumin0.5 tsp
Chili Powder0.5 tsp
Salt0.3 tsp

Instructions

Cook brown rice according to package instructions. (Approx. 15-20 minutes for quick-cook, start this first).

Dice chicken breast into 1/2-inch cubes. Season with cumin, chili powder, and salt.

Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 5-7 minutes until browned and cooked through.

While chicken cooks, rinse and drain black beans. Dice bell pepper. Chop cilantro. Slice avocado.

In a large bowl, combine cooked brown rice, black beans, corn, diced bell pepper, and cooked chicken.

Add salsa, a squeeze of lime juice, and chopped cilantro. Toss to combine.
