Turkey & Vegetable Skewers with Quinoa

Ingredients (Serves 2)

Turkey Breast250 g
Quinoa150 g
Bell Peppers100 g
Zucchini100 g
Red Onion50 g
Olive Oil12.5 ml
Lemon Juice10 ml
Dried Oregano1 g
Dried Thyme1 g

Instructions

Cook quinoa according to package instructions (typically 1 part quinoa to 2 parts water, simmer for 15 minutes). Set aside.

While quinoa cooks, preheat a grill pan or oven broiler to medium-high. If using oven, preheat to 200°C (390°F).

Cut turkey breast into 2.5 cm (1 inch) cubes. Chop bell peppers, zucchini, and red onion into similar-sized pieces.

Thread turkey and vegetables alternately onto skewers. You should have about 4 skewers for two people.

In a bowl, toss the skewers with olive oil, lemon juice, dried oregano, dried thyme, salt, and black pepper, ensuring all pieces are lightly coated.

Grill skewers for 8-10 minutes, turning occasionally, until turkey is cooked through and vegetables are tender-crisp and slightly charred. If using oven, roast on a baking sheet for 10-15 minutes, flipping halfway.

Serve the cooked skewers immediately alongside the prepared quinoa.
