Instructions

Peel and dice the parsnip, carrot, and onion into small, uniform pieces. Mince the garlic. (3 minutes)

Heat the olive oil in a large skillet or pan over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 3 minutes. (3 minutes)

Add the diced parsnip, carrot, onion, and minced garlic to the skillet. Stir in the dried thyme, salt, and black pepper. Sauté for 3 minutes until the vegetables start to soften. (3 minutes)

Pour in the vegetable broth, bring to a simmer, and cook for 2 minutes, stirring occasionally, until the liquid has mostly evaporated and the vegetables are tender-crisp. (2 minutes)
