Turkey Meatball & Cabbage Skillet with Tomato Sauce

- Garlic1 clove
- Tomatoes125 g
- Olive Oil10 ml
- Dried Oregano1 g
- Salt1.5 g
- Black Pepper0.5 g
- Lean Ground Turkey250 g
- Cabbage250 g
- Vegetable Broth100 ml
- Dried Basil1 g
- Fresh Parsley5 g
Instructions

1. Finely chop the onion and mince the garlic (4 minutes). Thinly slice the cabbage (4 minutes).

2. In a bowl, mix the ground turkey with 1/2 of the chopped onion, 1/2 of the minced garlic, 1/2 of the salt, and 1/2 of the black pepper. Form into 8-10 small meatballs (4 minutes).

3. Heat the olive oil in a large skillet over medium-high heat (1 minute). Add the meatballs and brown them on all sides, about 5 minutes (5 minutes). Remove meatballs from the skillet and set aside.

4. Add the remaining onion and garlic to the skillet. Sauté for 2 minutes until softened (2 minutes).

5. Stir in the sliced cabbage, crushed tomatoes, vegetable broth, dried oregano, dried basil, and remaining salt and pepper. Bring to a simmer (1 minute).
