Tofu & Vegetable Quinoa Pilaf

Ingredients (Serves 2)

Firm tofu, pressed and crumbled14 oz
Dry quinoa0.3 cup
Water or vegetable broth0.6 cup
Medium onion, diced0.3 pcs
Frozen mixed vegetables0.8 cup
Garlic, minced1 cloves
Olive oil or dairy-free butter alternative0.8 tbsp
Dairy-free soy sauce0.5 tbsp
Salt0 to taste
Black pepper0 to taste

Instructions

Rinse quinoa under cold water using a fine-mesh sieve.

Heat olive oil or dairy-free butter in a large skillet or pot over medium heat.

Add diced onion and cook until softened, about 3-4 minutes.

Add minced garlic and cook for 1 minute more until fragrant.

Add the crumbled tofu and cook, stirring occasionally, until lightly browned and some moisture has evaporated, about 5-7 minutes.

Stir in the frozen mixed vegetables and rinsed quinoa. Cook for 1-2 minutes.

Pour in the water or broth and dairy-free soy sauce. Bring to a simmer.

Reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed.

Season with salt and pepper to taste.
