Tofu & Quinoa Power Bowl

Ingredients (Serves 2)

Firm tofu, pressed and crumbled12 oz
Dry quinoa0.4 cup
Frozen mixed vegetables2 cup
Medium onion0.3 pcs
Garlic cloves, minced1 pcs
Dairy-free soy sauce1 tbsp
Rice vinegar0.5 tbsp
Sesame oil0.5 tbsp
Olive oil0.5 tsp
Ginger powder0.3 tsp
Garlic powder0.3 tsp
Salt0 taste
Black pepper0 taste

Instructions

Cook quinoa according to package directions. Set aside.

While quinoa cooks, press excess water from tofu and crumble it into bite-sized pieces.

Finely chop the onion and mince the garlic.

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger powder, and garlic powder. Set aside.

Heat olive oil in a large skillet or wok over medium-high heat.

Add the crumbled tofu and cook, stirring occasionally, until browned and slightly crispy, about 8-10 minutes. Season with salt and pepper.

Add the chopped onion and minced garlic to the skillet with the tofu and cook until fragrant, about 1-2 minutes.

Add the frozen mixed vegetables to the skillet. Cook, stirring occasionally, until heated through and tender-crisp, about 5-7 minutes.

Pour the prepared sauce over the tofu and vegetables. Stir to coat and cook for 1-2 minutes until slightly thickened.

Combine the cooked quinoa with the tofu and vegetable mixture in the skillet or serve the mixture over the quinoa in bowls.
