Tofu and Black Bean Quesadilla

Ingredients (Serves 1)

extra firm tofu200 g
canned black beans, drained and rinsed100 g
small corn tortilla80 g
onion, chopped50 g
bell pepper, chopped50 g
cumin2 g
chili powder2 g
olive oil10 ml
salt1 g
black pepper0.5 g

Instructions

Press the tofu to remove excess water, then crumble it into small pieces.

Heat half of the olive oil in a skillet over medium heat.

Add chopped onion and bell pepper and sauté until softened, about 5-7 minutes.

Add crumbled tofu, black beans, cumin, chili powder, salt, and pepper to the skillet.

Cook, stirring occasionally, for 8-10 minutes, until the tofu is heated through and slightly browned.

Remove the filling from the skillet and wipe the skillet clean.

Place one corn tortilla in the skillet over medium heat. Sprinkle half of the filling over half of the tortilla.

Fold the tortilla in half to create a quesadilla. Cook for 3-4 minutes per side, or until golden brown and crispy.

Repeat with the remaining tortilla and filling.

Cut the quesadilla in half and serve hot.
