Thai Red Curry with Lamb and Seasonal Vegetables

Ingredients (Serves 1)

Lamb200 g
Red Curry Paste30 g
Coconut Milk50 ml
Vegetable Broth150 ml
Cauliflower100 g
Broccoli100 g
Carrot50 g
Mushroom50 g
Leek50 g
Olive Oil3 ml
Garlic5 g
Ginger5 g
Fish Sauce5 ml
Brown Sugar3 g
Coriander5 g

Instructions

Slice the lamb into thin strips. Chop the cauliflower and broccoli into florets, slice the carrot, mushroom, and leek. Mince the garlic and ginger (10 minutes).

Heat the olive oil in a pot or deep skillet over medium heat.

Add the minced garlic and ginger and sauté until fragrant, about 2 minutes.

Add the red curry paste and cook for 1 minute, stirring constantly.

Add the lamb strips and sear until browned on all sides, about 4 minutes.

Pour in the coconut milk and vegetable broth. Add the chopped vegetables (cauliflower, broccoli, carrot, mushroom, leek).

Bring the curry to a gentle simmer and cook for about 8 minutes, or until the vegetables are tender and the lamb is cooked through.

Stir in the fish sauce and brown sugar (if using). Taste and adjust seasoning if needed.

Serve hot, garnished with fresh coriander.
