Svinjski Zrezek z Mladim Krompirjem in Divjim Česnom
A flavorful Slovenian dinner featuring a tender pan-fried pork steak served with thinly sliced new potatoes and vibrant, seasonal wild garlic (čemaž), perfect for a hearty and traditional evening meal.

- Wild Garlic50 g
- Olive Oil17 g
- Pork Loin190 g
- New Potatoes280 g
Instructions

Step 1: Wash and thinly slice the new potatoes (about 3-4mm thick). Wash the wild garlic and roughly chop.

Step 2: Heat 10g of olive oil in a large non-stick pan over medium-high heat. Add the sliced potatoes in a single layer if possible, or in batches. Cook for 8-12 minutes, turning occasionally, until golden brown and tender. Season with salt and pepper to taste.

Step 3: While potatoes are cooking, season the pork loin steak with salt and pepper.

Step 4: In a separate pan (or once potatoes are nearly done, move them aside), heat the remaining 7g of olive oil over medium-high heat. Add the pork steak and cook for 4-5 minutes per side, or until cooked through and nicely browned.

Step 5: In the last 2 minutes of cooking the pork, add the chopped wild garlic to the pan with the potatoes or pork (or both) and stir until just wilted. Serve the pork steak alongside the pan-fried potatoes and wild garlic.
