Spicy Tofu and Black Bean Rice Bowl

Ingredients (Serves 1)

extra firm tofu250 g
canned black beans, drained and rinsed100 g
cooked rice150 g
onion, chopped50 g
bell pepper, sliced50 g
broccoli florets50 g
garlic, minced5 g
cumin2 g
chili powder2 g
soy sauce10 ml
olive oil5 ml
salt0.5 g
black pepper0.5 g

Instructions

Press the tofu to remove excess water, then cut into cubes.

Heat olive oil in a pan over medium-high heat.

Add tofu cubes and cook, turning occasionally, until golden brown on all sides.

Add chopped onion, sliced bell pepper, and broccoli florets to the pan. Sauté for 5-7 minutes until vegetables are slightly softened.

Stir in minced garlic, cumin, and chili powder and cook for 1 minute until fragrant.

Add the drained and rinsed black beans, soy sauce, salt, and pepper. Stir to combine.

Add about 50ml of water, bring to a simmer, and cook for 5-10 minutes, allowing the sauce to thicken slightly.

Serve the tofu and black bean mixture over the cooked rice.
