Bell Pepper150 g
Onion80 g

Black Bean100 g
Corn50 g
Avocado30 g
Lime Juice10 ml
Chili Powder1 tsp
Cumin0.5 tsp
Garlic Powder0.5 tsp
Paprika0.5 tsp
Cilantro5 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Step 1: Slice the bell pepper and onion into thin strips. Mince the cilantro. Dice the avocado. Drain and rinse the black beans.

Step 2: Pat the shrimp dry and season with salt, pepper, chili powder, cumin, garlic powder, and paprika.

Step 3: Heat olive oil in a large skillet or wok over medium-high heat for 1 minute. Add the bell pepper and onion, and stir-fry for 3-4 minutes until slightly tender-crisp.

Step 4: Add the seasoned shrimp to the skillet and cook for 3-4 minutes, stirring occasionally, until pink and cooked through. Add the black beans and corn, stir to combine, and cook for 1 minute until heated through.

Step 5: Remove from heat. Stir in the fresh lime juice and minced cilantro. Serve immediately, topped with diced avocado.
