Spicy Chicken & Rice Bowl

Ingredients (Serves 2)

Cooked Chicken Breast140 g
Dry Rice40 g
Cooked Black Beans50 g
Corn (canned or frozen)25 g
Olive Oil5 ml
Cumin1 g
Chili Powder1 g
Garlic Powder1 g
Salt1 g
Black Pepper0.5 g
Salsa50 g
Fresh Cilantro5 g
Lime0.5 pcs

Instructions

Cook the rice according to package instructions. Set aside.

If using raw chicken, dice and cook it now. If using pre-cooked chicken, dice or shred it.

Heat olive oil in a pan over medium-high heat. Add the cooked chicken and season with cumin, chili powder, garlic powder, salt, and pepper. Cook for 3-5 minutes until heated through and slightly browned.

Add the black beans and corn to the pan with the chicken. Cook for another 2-3 minutes until heated through.

To assemble the bowls, divide the cooked rice between two bowls.

Spoon the chicken and bean mixture over the rice.

Top each bowl generously with salsa.

Finely chop fresh cilantro and sprinkle over the bowls.

Serve with lime wedges for squeezing over the top.
