Spicy Chicken and Rice Tortilla Bowls

Ingredients (Serves 2)

Cooked chicken breast, diced8 oz
Cooked rice1 cup
Soft tortillas (corn or flour, dairy-free)1
Frozen mixed vegetables1.5 cup
Medium onion, diced0.3 cup
Taco seasoning (check dairy-free)1 tbsp
Olive oil1.5 tsp
Salt0 pinch
Black pepper0 pinch

Instructions

Preheat oven to 350°F (175°C) or air fryer to 375°F (190°C). Cut tortillas into strips or triangles.

Toss tortilla strips with a drizzle of olive oil and a pinch of salt. Spread on a baking sheet or in the air fryer basket.

Bake or air fry for 5-8 minutes, or until crispy. Set aside.

Heat remaining olive oil in a large skillet over medium heat.

Add the diced onion and cook until softened, about 3-4 minutes.

Add the frozen mixed vegetables and cook for 5-7 minutes, or until tender-crisp.

Add the diced cooked chicken and taco seasoning to the skillet. Stir to combine and cook for 3-5 minutes, or until chicken is heated through and coated in seasoning.

Season with salt and pepper to taste.

Divide the cooked rice between two bowls.

Spoon the chicken and vegetable mixture over the rice.

Top each bowl with crispy tortilla strips.
