- Cooked chicken breast, diced8 oz
- Cooked rice1 cup
- Medium onion, diced0.3 cup
- Soft tortillas (corn or flour, dairy-free)1
- Olive oil1.5 tsp
- Salt0 pinch
- Black pepper0 pinch
- Frozen mixed vegetables1.5 cup
- Taco seasoning (check dairy-free)1 tbsp
Instructions

Preheat oven to 350°F (175°C) or air fryer to 375°F (190°C). Cut tortillas into strips or triangles.

Toss tortilla strips with a drizzle of olive oil and a pinch of salt. Spread on a baking sheet or in the air fryer basket.
