Cooked boneless, skinless chicken breast300 g
Canned black beans, rinsed and drained100 g
Canned or frozen corn50 g
Cooked brown rice50 g
Medium tortillas (dairy-free)2 pcs
Bell pepper (any color)100 g
Onion50 g
Olive oil25 ml
Chili powder3 g
Cumin2 g
Salt1 g
Black pepper0.5 g
Salsa (for serving)60 g

Instructions

Dice the bell pepper and onion.

Heat olive oil in a large skillet over medium-high heat.

Add diced bell pepper and onion and cook until softened, about 5-7 minutes.

Add the cooked chicken, black beans, corn, cooked rice, chili powder, cumin, salt, and pepper to the skillet.

Stir well and cook for 5-7 minutes, stirring occasionally, until everything is heated through and flavors are combined.

Warm the tortillas according to package instructions (microwave or skillet).

Divide the chicken and vegetable mixture evenly between the two warm tortillas.
