Speedy Vietnamese Turmeric Fish with Garlic Noodles
A vibrant and aromatic dish featuring tender white fish marinated with turmeric and dill, quickly pan-seared and served over slippery garlic-infused rice noodles. A nod to 'Cha Ca La Vong' but simplified for speed.
Ingredients
- White Fish Fillet180 g
- Rice Noodles80 g
- Fish Sauce10 ml
- Garlic2 cloves
- Green Onion1 stalk
- Cooking Oil15 ml
- Black Pepper0.5 g
- Turmeric Powder3 g
- Lime Juice5 ml
- Fresh Dill10 g
- Sugar2 g
Instructions

Cook rice noodles according to package directions. Drain and set aside.

Cut fish fillet into 2-3 cm pieces. In a bowl, marinate fish with turmeric powder, 5 ml fish sauce, 2 ml lime juice, 1g sugar, and black pepper. Stir in half of the chopped fresh dill.

Heat 10 ml cooking oil in a large non-stick pan or wok over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant.

Add the marinated fish to the pan and cook for 3-4 minutes, turning occasionally, until cooked through and lightly browned.

Add the cooked rice noodles to the pan with the fish. Drizzle with remaining 5 ml fish sauce, 3 ml lime juice, and 1g sugar. Toss everything together for 1-2 minutes until noodles are coated and heated through.
