Pork Tenderloin250 g
Rice Noodles40 g
Leeks100 g
Soy Sauce15 ml
Ginger5 g
Garlic5 g
Sesame Oil5 ml
Vegetable Oil7.5 ml

Instructions

Bring a pot of water to a boil for the rice noodles. (Prep time: 1 minute)

While water heats, slice the pork tenderloin into thin strips. Thinly slice the leeks. Mince the ginger and garlic. (Prep time: 4 minutes)

Once water boils, remove from heat and add the rice noodles. Let them soak according to package directions, usually 5-7 minutes, stirring occasionally to prevent sticking. (Cook time: 7 minutes, simultaneous with stir-fry)

Heat 15 milliliters of vegetable oil in a large skillet or wok over medium-high heat. Add the pork strips and stir-fry for 4 minutes until browned and cooked through. (Cook time: 4 minutes)

Add the sliced leeks, minced ginger, and minced garlic to the skillet. Stir-fry for another 3 minutes until the leeks are tender-crisp. (Cook time: 3 minutes)

Stir in 30 milliliters of soy sauce and 10 milliliters of sesame oil. Toss everything to coat, for about 2 minutes. (Cook time: 2 minutes)

Drain the rice noodles and divide them between two bowls. Top with the pork and leek stir-fry and serve hot.
