Speedy Pork and Summer Vegetable Stir-fry

Ingredients (Serves 2)

Pork Tenderloin400 g
Pepper250 g
Zucchini250 g
Onion100 g
Garlic15 g
Ginger10 g
Soy Sauce40 ml
Sesame Oil10 ml
Vegetable Oil20 ml
Salt1 g
Pepper1 g

Instructions

Slice the 400g pork tenderloin thinly against the grain (3 minutes). Season with salt and pepper.

Wash and slice the 250g peppers and 250g zucchini. Slice the 100g onion (4 minutes).

Mince the 15g garlic and 10g ginger (3 minutes).

In a small bowl, mix the 40 ml soy sauce and 10 ml sesame oil.

Heat 20 ml vegetable oil in a large pan or wok over high heat until shimmering (1 minute).

Add the sliced pork and stir-fry until browned and mostly cooked through, about 3-4 minutes (4 minutes). Remove pork from the pan and set aside.

Add the sliced onion to the pan and stir-fry for 1 minute until slightly softened (1 minute).

Add the sliced peppers and zucchini and stir-fry for 3-4 minutes until tender-crisp (4 minutes).

Add the minced garlic and ginger and stir-fry for 30 seconds until fragrant (1 minute).

Return the pork to the pan. Pour the soy sauce mixture over everything and toss to coat (1 minute).

Cook for another minute until heated through.

Serve immediately.
