Onion50 g

Eggplant100 g
Vegetable Broth100 ml
Olive Oil5 ml
Oregano1 g
Basil1 g
Bay Leaf1 g
Salt1 g
Pepper1 g

Instructions

Rinse the canned white beans and drain (1 minute).

Chop the onion, zucchini, and eggplant into bite-sized pieces (8 minutes).

Mince the garlic (2 minutes).

Heat the olive oil in a pot or deep skillet over medium heat (1 minute).

Add the chopped onion and minced garlic and sauté until fragrant, about 2 minutes.

Add the chopped zucchini and eggplant and sauté until slightly softened, about 4 minutes.

Stir in the white beans, diced tomatoes, vegetable broth, oregano, basil, bay leaf, salt, and pepper (1 minute).
