Speedy Mediterranean Shrimp Scampi with Zucchini Noodles and Couscous

- Shrimp180 g
- Zucchini300 g
- Whole Wheat Couscous75 g

Instructions

Pat shrimp dry. Spiralize zucchini into noodles. Halve cherry tomatoes and mince garlic. Chop parsley. (5 minutes)

Bring 150ml of water to a boil in a small saucepan. Add whole wheat couscous, a pinch of salt, cover, and remove from heat. Let sit for 5 minutes until water is absorbed, then fluff with a fork. (5 minutes)

While couscous is cooking, heat olive oil in a large skillet over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant. Add shrimp and cook for 2-3 minutes per side until pink and opaque. (3 minutes)

Add cherry tomatoes and zucchini noodles to the skillet with the shrimp. Toss quickly for 1-2 minutes until zucchini is slightly tender-crisp. (2 minutes)
