Chicken Breast175 g
Brown Rice75 g
Carrot60 g
Parsnip60 g
Cabbage90 g
Soy Sauce15 ml
Ginger5 g
Garlic5 g
Sesame Oil5 ml
Vegetable Broth25 ml

Instructions

Step 1: Cook brown rice according to package instructions. While rice cooks, prepare vegetables and chicken.

Step 2: Dice chicken breast into 1-inch pieces. Julienne carrots and parsnips. Thinly slice cabbage. Mince ginger and garlic.

Step 3: Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.

Step 4: Add carrots, parsnips, cabbage, ginger, and garlic to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.

Step 5: Return chicken to the skillet. Add soy sauce and vegetable broth. Stir to combine and heat through for 1-2 minutes.

Step 6: Serve the stir-fry immediately over cooked brown rice.
