Speedy Chicken and Zucchini Stir-fry with Rice

Ingredients (Serves 2)

Chicken Breast460 gram
Zucchini200 gram
Bell Pepper150 gram
Peas (fresh or frozen)110 gram
Onion50 gram
Garlic10 gram
Ginger5 gram
Olive Oil or Sesame Oil25 ml
Soy Sauce or Tamari30 ml
Honey or Maple Syrup (optional)5 ml
Rice140 gram
Water280 ml

Instructions

Cook the rice according to package instructions (usually boil water, add rice, simmer until water is absorbed).

Meanwhile, slice the chicken breast into strips.

Dice the zucchini, bell pepper, and onion. Mince the garlic and ginger.

Heat the oil in a large pan or wok over medium-high heat.

Add the chicken strips and stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken from pan and set aside.

Add the onion, bell pepper, zucchini, garlic, and ginger to the pan. Stir-fry for 3-5 minutes until vegetables are slightly tender-crisp.

Add the peas and cooked chicken back to the pan.

In a small bowl, mix the soy sauce or tamari and optional honey or maple syrup.

Pour the sauce over the stir-fry and toss to coat. Cook for another 1-2 minutes until heated through.

Serve the stir-fry immediately over the cooked rice.
