Speedy Beef & Vegetable Stir-fry with Brown Rice

Ingredients (Serves 1)

Lean Beef200 g
Broccoli150 g
Carrot80 g
Bell Pepper80 g
Brown Rice100 g
Soy Sauce15 ml
Ginger10 g
Garlic10 g
Olive Oil7.5 ml
Salt1 pinch
Black Pepper1 pinch

Instructions

Cook brown rice according to package instructions. While rice cooks, prepare vegetables.

Slice lean beef into thin strips. Chop broccoli into florets, slice carrot into thin rounds or matchsticks, and slice bell pepper.

Mince garlic and ginger.

Heat olive oil in a large skillet or wok over high heat. Add beef strips and stir-fry for 2-3 minutes until browned. Season with salt and pepper. Remove beef from pan and set aside.

Add carrots and broccoli to the pan, stir-fry for 3-4 minutes until slightly tender-crisp. Add bell pepper, garlic, and ginger, stir-fry for another 1-2 minutes.

Return beef to the pan. Pour in soy sauce and toss to combine, cooking for 1 minute until heated through.

Serve the stir-fry immediately over the cooked brown rice.
