Speedy Beef and Black Bean Burrito Bowl

Ingredients (Serves 1)

Extra lean ground beef (raw)250 g
Canned black beans, rinsed and drained150 g
Dry rice (e.g., long grain)35 g
Shredded cheese (cheddar or Mexican blend)20 g
Onion, diced20 g
Bell pepper, diced20 g
Garlic, minced5 g
Canned crushed tomatoes50 g
Olive oil5 ml
Chili powder3 g
Cumin2 g
Smoked paprika1 g
Dried oregano1 g
Salt2 g
Black pepper1 g
Water70 ml
Shredded lettuce30 g
Diced tomato (seasonal)50 g

Instructions

Cook rice according to package directions. While rice cooks, prepare the beef.

Heat olive oil in a large pan or pot over medium-high heat.

Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat if necessary.

Add diced onion and bell pepper to the pan and cook until softened, about 5-7 minutes.

Stir in minced garlic and cook for 1 minute until fragrant.

Add chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir for 1 minute.

Stir in crushed tomatoes, black beans, and water. Bring to a simmer.

Reduce heat and simmer for 10-15 minutes, stirring occasionally, until slightly thickened and flavors have melded.

To assemble the bowl, place cooked rice in the bottom of a bowl.
