Slovenska Omleta z Divjim Česnom in Sirom, Zelena Solata (Slovenian Omelette with Wild Garlic and Cheese, Green Salad)

Ingredients (Serves 1)

Egg4 large
Wild garlic60 g
Hard cheese45 g
Olive oil13 ml
Mixed greens100 g
Pumpkin seed oil12 ml
Apple cider vinegar5 ml
Salt0.3 tsp
Black pepper0.1 tsp

Instructions

Step 1: Finely chop the wild garlic and grate the hard cheese.

Step 2: In a bowl, whisk eggs with a pinch of salt and pepper. Stir in the chopped wild garlic and half of the grated cheese.

Step 3: Heat 8ml olive oil in a non-stick pan (about 20cm diameter) over medium heat. Pour in the egg mixture. Cook for 3-4 minutes until the edges are set and the bottom is golden.

Step 4: Sprinkle the remaining cheese over the top, cover the pan, and cook for another 2-3 minutes until the cheese is melted and the omelette is set to your liking.

Step 5: In a separate bowl, combine mixed greens with pumpkin seed oil, apple cider vinegar, salt, and pepper to make a simple salad.

Step 6: Slide the omelette onto a plate and serve immediately with the green salad.
