- Wild garlic60 g
- Hard cheese45 g
- Olive oil13 ml
- Pumpkin seed oil12 ml
- Apple cider vinegar5 ml
- Salt0.3 tsp
- Black pepper0.1 tsp
- Egg4 large
- Mixed greens100 g
Instructions

Step 1: Finely chop the wild garlic and grate the hard cheese.

Step 2: In a bowl, whisk eggs with a pinch of salt and pepper. Stir in the chopped wild garlic and half of the grated cheese.

Step 3: Heat 8ml olive oil in a non-stick pan (about 20cm diameter) over medium heat. Pour in the egg mixture. Cook for 3-4 minutes until the edges are set and the bottom is golden.

Step 4: Sprinkle the remaining cheese over the top, cover the pan, and cook for another 2-3 minutes until the cheese is melted and the omelette is set to your liking.
