Cucumber100 g
Cherry Tomatoes100 g
Bell Pepper75 g
Red Onion25 g
Mixed Greens50 g
Olive Oil30 ml
Lemon Juice30 ml
Dijon Mustard5 g
Garlic5 g
Fresh Parsley10 g

Instructions

Drain and rinse the chickpeas thoroughly. Pat them dry with a paper towel.

Dice the cucumber, cherry tomatoes, bell pepper, and red onion into bite-sized pieces. Mince the garlic and chop the fresh parsley.

In a large bowl, combine the chickpeas, diced vegetables, and mixed greens.

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, chopped parsley, salt, and black pepper to create the dressing.
