Simple Chicken and Spinach Curry with Rice

Ingredients (Serves 2)

Dry brown rice150 g
Olive oil20 ml
Onion150 g
Bell pepper150 g
Garlic10 g
Fresh ginger10 g
Chicken breast300 g
Curry powder15 g
Canned crushed tomatoes400 g
Spinach100 g
Salt2 g
Black pepper1 g

Instructions

Cook the dry brown rice according to package instructions. Set aside.

While the rice is cooking, heat the olive oil in a large pan or pot over medium-high heat.

Add the chopped onion and bell pepper and cook for 5-7 minutes until softened.

Stir in the minced garlic and grated fresh ginger. Cook for 1 minute until fragrant.

Add the diced chicken breast and cook, stirring occasionally, until browned on all sides.

Stir in the curry powder and cook for 1 minute, letting the spices toast.

Pour in the canned crushed tomatoes and add salt and black pepper. Bring to a simmer.

Reduce heat to low, cover, and let simmer for 10-15 minutes, or until the chicken is cooked through.

Stir in the spinach and cook until wilted.
