Shrimp (peeled and deveined)200 g
Yellow onion75 g
Bell pepper (any color)75 g

Canned crushed tomatoes200 g
Olive oil15 ml
Curry powder8 g
Turmeric powder3 g

Black pepper0.5 g

Instructions

Cook the dry brown rice according to package instructions. Keep warm.

Dice the yellow onion and bell pepper. Mince the garlic.

Heat the olive oil in a large pan or pot over medium heat.

Add the diced onion and bell pepper and cook until softened, about 5-7 minutes.

Add the minced garlic, curry powder, and turmeric powder. Cook, stirring constantly, for 1-2 minutes until fragrant.

Pour in the canned crushed tomatoes and stir to combine. Bring the sauce to a gentle simmer.
