Dry brown rice120 g
Olive oil15 ml
Shrimp (peeled and deveined)300 g
Bell pepper200 g
Onion100 g
Garlic10 g
Low-sodium soy sauce (dairy-free)20 ml
Sesame oil10 ml
Salt1 g
Black pepper0.5 g

Instructions

Cook the dry brown rice according to package instructions. While rice cooks, prepare the rest of the ingredients.

Heat olive oil in a large pan or wok over medium-high heat.

Add sliced onion and bell pepper and cook for 5-7 minutes until slightly softened.

Add minced garlic and cook for 1 minute until fragrant.

Add the peeled and deveined shrimp to the pan. Cook for 3-4 minutes, stirring occasionally, until shrimp are pink and opaque.

In a small bowl, whisk together low-sodium soy sauce and sesame oil.

Pour the sauce over the shrimp and vegetables, stirring to coat.
