Cooked boneless, skinless chicken breast300 g
Canned black beans, rinsed and drained200 g
Cooked brown rice200 g
Canned or frozen corn100 g
Bell pepper (any color)100 g
Onion50 g
Avocado1 pcs
Lime1 pcs
Olive oil10 ml
Smoked paprika2 g
Chili powder1 g
Cumin1 g
Salt1 g
Black pepper0.5 g

Instructions

Dice the cooked chicken, bell pepper, and onion into small pieces.

In a bowl, toss the diced chicken with smoked paprika, chili powder, cumin, salt, and pepper.

In a large bowl, combine the cooked brown rice, seasoned chicken, rinsed black beans, corn, diced bell pepper, and diced onion.

For the dressing, mash the avocado in a small bowl. Squeeze the juice of the lime into the avocado and add the olive oil, a pinch of salt, and pepper. Mix until smooth.

Add the avocado dressing to the rice and chicken mixture.
