Ingredients (Serves 2)

Sardines in Olive Oil240 g
White Beans200 g
Cherry Tomatoes200 g
Red Onion50 g
Parsley10 g
Lemon Juice20 ml
Olive Oil15 ml
Salt1 g
Pepper0.4 g

Instructions

Drain 3 cans (approximately 240g drained weight) of sardines in olive oil, reserving the oil.

Rinse and drain 200g of cooked white beans.

Halve 200g of cherry tomatoes.

Finely slice 50g of red onion.

Chop 10g of fresh parsley.

In a medium bowl, gently combine the drained sardines, white beans, halved cherry tomatoes, and sliced red onion.

In a small bowl, whisk together 20ml of lemon juice, 15ml of fresh olive oil (add more from the sardine can if desired for flavour, adjusting total oil quantity), 1g of salt, and 0.4g of pepper.

Pour the dressing over the salad ingredients.

Add the chopped parsley and gently toss to coat. Divide into two portions and serve.
