Roasted Soy-Ginger Chicken & Vegetable Rice Bowls

Ingredients (Serves 3)

boneless, skinless chicken breasts135 g
brown rice (dry)50 g
broccoli florets75 g
carrots50 g
bell pepper (any color)50 g
yellow onion30 g
garlic5 g
fresh ginger5 g
soy sauce (or tamari)15 ml
cooking oil8 ml
salt0.5 g
black pepper0.2 g

Instructions

Preheat oven to 200°C (400°F). Cook brown rice according to package instructions.

Cut chicken breasts into bite-sized pieces. Chop broccoli into florets, slice carrots, and dice bell pepper and onion.

Mince the garlic and grate the fresh ginger.

In a small bowl, whisk together soy sauce, minced garlic, grated ginger, and half of the cooking oil.

In a large bowl, toss the chicken pieces and chopped vegetables (broccoli, carrots, bell pepper, onion) with the soy-ginger mixture. Season with salt and pepper.

Spread the chicken and vegetables in a single layer on a baking sheet lined with parchment paper.

Roast for 20-25 minutes, or until chicken is cooked through and vegetables are tender-crisp, stirring halfway through.

Divide cooked brown rice among 3 bowls. Top with the roasted chicken and vegetables.

Drizzle with any pan juices from the baking sheet. Serve hot.
