Roasted Soy-Ginger Chicken & Vegetable Rice Bowls
Tender roasted chicken and a medley of colorful vegetables coated in a flavourful soy-ginger sauce, served over fluffy brown rice. A satisfying and nutrient-dense bowl.
Ingredients
- boneless, skinless chicken breasts135 g
- brown rice (dry)50 g
- broccoli florets75 g
- carrots50 g
- bell pepper (any color)50 g
- yellow onion30 g
- garlic5 g
- bell pepper (any color)50 g
- cooking oil8 ml
- salt0.5 g
- black pepper0.2 g
- fresh ginger5 g
- soy sauce (or tamari)15 ml
Instructions

Preheat oven to 200°C (400°F). Cook brown rice according to package instructions.

Cut chicken breasts into bite-sized pieces. Chop broccoli into florets, slice carrots, and dice bell pepper and onion.

Mince the garlic and grate the fresh ginger.

In a small bowl, whisk together soy sauce, minced garlic, grated ginger, and half of the cooking oil.

In a large bowl, toss the chicken pieces and chopped vegetables (broccoli, carrots, bell pepper, onion) with the soy-ginger mixture. Season with salt and pepper.
