Pork loin, raw380 g
Small potatoes230 g
Green beans150 g
Olive oil14 g
Garlic5 g
Fresh rosemary5 g
Fresh thyme5 g
Salt1 g

Instructions

Preheat oven to 200°C (400°F).

Cut potatoes into quarters or halves, depending on size. Trim the ends off the green beans.

In a bowl, toss potatoes with half of the olive oil (7g), chopped garlic, rosemary, thyme, salt, and pepper.

Spread potatoes in a single layer on a baking sheet.

Roast potatoes for 15 minutes.

While potatoes roast, pat the pork loin dry and season generously with salt and pepper.

Heat the remaining olive oil (7g) in an oven-safe skillet over medium-high heat.

Sear the pork loin on all sides until golden brown, about 2-3 minutes per side.

Add the green beans to the baking sheet with the potatoes. Toss green beans with a tiny bit of oil from the pan or a drizzle if needed.

Place the seared pork loin in the oven-safe skillet (or transfer to the baking sheet with vegetables).

Return the skillet/baking sheet to the oven and roast for another 20-30 minutes, or until the pork reaches an internal temperature of 63°C (145°F) for medium-rare, or 71°C (160°F) for medium, and the potatoes are tender.

Let the pork rest for 5-10 minutes before slicing.

Serve sliced pork with roasted potatoes and green beans.
