Roasted Chicken Breast with Paprika Broccoli and Mushrooms

Ingredients (Serves 1)

raw chicken breast275 g
broccoli florets150 g
mushroom100 g
olive oil25 ml
garlic powder2 g
onion powder2 g
paprika3 g
salt2 g
black pepper1 g

Instructions

Preheat oven to 200°C (400°F).

Pat the chicken breast dry.

In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, and black pepper.

Place the chicken breast on a baking sheet. Rub half of the oil mixture all over the chicken.

Break the broccoli into florets and slice the mushrooms.

In the same bowl used for the oil mixture, add the broccoli and mushrooms. Add the remaining oil mixture and toss to coat the vegetables evenly.

Arrange the seasoned vegetables around the chicken on the baking sheet.

Roast for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 74°C or 165°F) and the vegetables are tender and slightly browned.

Let the chicken rest for a few minutes before slicing and serving with the roasted vegetables.
