Roasted Beef and Root Vegetables with Herbs

Ingredients (Serves 3)

lean beef sirloin/flank steak390 g
potatoes200 g
carrots90 g
broccoli florets90 g
bell pepper (any color)50 g
yellow onion50 g
garlic7 g
olive oil7 ml
dried herbs (e.g., rosemary, thyme)2 g
garlic powder1 g
onion powder1 g
salt2 g
black pepper1 g

Instructions

Preheat oven to 200°C (400°F).

Cut beef into large chunks or leave as a roast. Pat dry with paper towels.

Peel and chop potatoes and carrots into roughly equal-sized chunks.

Cut broccoli into florets, slice bell pepper and onion into large pieces.

Mince or slice garlic.

In a large bowl, toss the potatoes, carrots, broccoli, bell pepper, and onion with half of the olive oil, half of the dried herbs, garlic powder, onion powder, half of the salt, and half of the pepper. Spread vegetables in a single layer on a large baking sheet.

In the same bowl, toss the beef chunks with the remaining olive oil, dried herbs, salt, and pepper.

Place the seasoned beef among the vegetables on the baking sheet.

Roast for 25-35 minutes for medium-rare beef chunks, or longer for a roast and desired doneness. Vegetables should be tender and slightly browned.

Let beef rest for 5-10 minutes before slicing if using larger pieces.

Serve the roasted beef with the roasted vegetables.
