Quick Vietnamese Caramelized Ginger Chicken with Jasmine Rice

Ingredients (Serves 1)

Chicken Thigh180 g
Jasmine Rice90 g
Green Beans100 g
Ginger20 g
Fish Sauce1.5 tbsp
Soy Sauce1 tbsp
Sugar1 tsp
Cooking Oil1 tbsp
Black Pepper0.3 tsp
Water3 tbsp
Spring Onion1 stalk

Instructions

If not pre-cooked, prepare 90g jasmine rice according to package instructions.

Cut the chicken thigh into 1-inch pieces. Thinly slice the ginger (no need to peel). Finely chop the spring onion.

In a medium skillet or wok, heat the cooking oil over medium-high heat. Add the sugar and cook for 1-2 minutes until it melts and turns into a light amber caramel (watch carefully to prevent burning).

Quickly add the chicken pieces and ginger to the pan. Stir-fry for 2-3 minutes until the chicken is lightly browned on all sides.

Pour in the fish sauce, soy sauce, and water. Add the black pepper. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.

While the chicken cooks, blanch the green beans in boiling water for 2-3 minutes until tender-crisp. Drain well.

Serve the caramelized ginger chicken over the jasmine rice with the blanched green beans on the side. Garnish with chopped spring onion.
