Quick Vietnamese Beef Curry Noodle Soup (Mi Cari Bo)

Beef Sirloin120 g
Rice Vermicelli Noodle80 g
Yellow Curry Paste20 g
Light Coconut Milk150 ml
Onion50 g
Bell Pepper50 g
Fish Sauce10 ml
Lime0.5 medium
Cooking Oil5 ml
Water200 ml

Instructions

Prepare the noodles: Boil water, add vermicelli, cook for 3-5 minutes until tender. Drain and rinse with cold water, set aside.

Thinly slice the beef sirloin. Dice the onion and bell pepper.

Heat cooking oil in a medium pot over medium heat. Add diced onion and bell pepper, sauté for 2-3 minutes until softened.

Add yellow curry paste to the pot and stir-fry for 1 minute until fragrant. Add sliced beef and cook until browned on all sides.

Pour in light coconut milk and water. Bring to a gentle simmer, then reduce heat and let it cook for 5-7 minutes, or until beef is tender and flavors meld. Season with fish sauce and a squeeze of lime juice.
