Potato100 g
Carrot75 g
Celeriac75 g
Onion50 g

Olive Oil10 ml
Vegetable Broth50 ml
Paprika3 g
Parsley5 g

Instructions

1. Peel and dice 200 grams of potato, 150 grams of carrot, and 150 grams of celeriac into small, uniform cubes. Mince 100 grams of onion and 10 grams of garlic. Chop 10 grams of fresh parsley (5 minutes).

2. Heat 20 milliliters of olive oil in a large skillet over medium-high heat. Add 300 grams of turkey mince and cook, breaking it up with a spoon, until browned, about 3 minutes. Season with 2 grams of salt and 1 gram of black pepper (2 minutes).

3. Add the minced onion, garlic, diced potato, carrot, and celeriac to the skillet. Sauté for 2 minutes.

4. Stir in 6 grams of paprika and 100 milliliters of vegetable broth. Bring to a simmer, cover, and cook for 2 minutes, or until vegetables are tender-crisp. Stir in the chopped parsley just before serving.
