Extra lean ground turkey250 g
Rice noodles (dry)120 g
Bell pepper100 g
Zucchini100 g
Green beans100 g
Soy sauce (gluten-free if needed)30 ml
Fresh ginger, minced5 g
Garlic, minced5 g
Olive oil10 ml
Water30 ml

Instructions

Cook rice noodles according to package instructions. Drain and set aside.

Slice bell pepper, zucchini, and trim green beans.

Heat olive oil in a large pan or wok over medium-high heat.

Add ground turkey and cook, breaking it up with a spoon, until browned.

Add minced ginger and garlic and cook for 1 minute until fragrant.

Add sliced vegetables (pepper, zucchini, green beans) to the pan and stir-fry for 5-7 minutes until slightly tender-crisp.

In a small bowl, whisk together soy sauce and water.

Pour the sauce over the turkey and vegetables, stir to combine, and cook for 2 minutes until slightly thickened.
