Ingredients (Serves 2)

Extra Firm Tofu (pressed and crumbled)375 g
Canned Chickpeas (drained and rinsed)125 g
Shredded Cabbage75 g
Grated Carrot40 g
Nutritional Yeast15 g
Sunflower Seeds5 g
Olive Oil7.5 ml
Apple Cider Vinegar5 ml
Dijon Mustard2 ml
Garlic Powder1 g
Onion Powder1 g
Salt1 g
Black Pepper0.5 g

Instructions

Ensure tofu is pressed and crumbled (can be done ahead of time).

In a large bowl, combine the crumbled tofu, drained and rinsed chickpeas, shredded cabbage, and grated carrot.

In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, garlic powder, onion powder, salt, and pepper to make the dressing.

Pour the dressing over the salad mixture.

Add the nutritional yeast and sunflower seeds to the bowl.
