Ingredients (Serves 2)

Canned kidney beans (drained and rinsed)250 g
Textured Pea Protein (dry)25 g
Canned crushed tomatoes200 g
Onion powder2.5 g
Garlic powder2.5 g
Smoked paprika2.5 g
Cumin2.5 g
Vegetable broth (lactose-free)100 ml
Olive oil15 ml
Salt1.5 g
Black pepper0.5 g

Instructions

Heat olive oil in a medium skillet over medium heat.

Add dry textured pea protein, onion powder, garlic powder, smoked paprika, and cumin to the skillet. Stir for 1 minute.

Pour in the vegetable broth and canned crushed tomatoes. Stir to combine and scrape up any spices from the bottom of the pan.

Add the drained and rinsed kidney beans. Stir well.

Bring the mixture to a simmer, then reduce heat to low, cover, and let simmer for 10-12 minutes, stirring occasionally, until the textured pea protein is rehydrated and the sauce has thickened slightly.

Season with salt and black pepper to taste.

Divide the skillet mixture between two bowls and serve hot.
